Garlic and lemon chicken

  • 4
    cloves garlic, crushed
  • 10
    ml
    coarse salt
  • 30
    ml
    whole black peppercorns
  • handful fresh coriander leaves (optional)
  • 45
    ml
    lemon juice
  • 8
    chicken pieces
  • TOMATO AND ONION SAMBAL
  • 4
    tomatoes, skinned and finely chopped
  • 1
    red onion, finely chopped
  • 30
    ml
    lemon juice
  • pinch cayenne pepper
  • chopped coriander leaves
 

Method

 
Mix all the ingredients, except the chicken pieces, and crush well. Brush the chicken pieces with the mixture and grill over hot coals, turning until done on both sides. Mix all the ingredients for the tomato and onion sambal and serve with the chicken.
