Garlic and apple aîoli

    free-range egg yolks
  • 15
    ml
    (1tbsp) lime juice
  • 250
    ml
    (1 cup) extra-virgin oil
  • 4
    garlic cloves, chopped
  • 1
    granny smith apple, diced
  • 5
    ml
    salt
  • 5
    ml
    freshly ground black pepper
 

Method

Beat egg yolks until pale and fluffy.

Add lime juice and slowly pour in the olive oil in a steady stream, beating all the time.

When it starts to thicken, add garlic and apple.

Taste and season.
