    (1 bag) mixed salad leaves
  • 30

    rocket
  • 90
    g
    baby corn spears, halved
  • 60
    g
    mangetouts
  • 0.50
    cucumber, halved lengthways and sliced
  • 1
    avocado pear, sliced
  • 250
    g
    chunky cottage cheese
  • 3
    carrots, julienned
  • 1
    red pepper, finely sliced
  • DRESSING
  • 45
    ml
    olive oil
  • 30
    ml
    balsamic vinegar
  • 2
    red chillies, sliced
  • 30
    g
    coriander, finely chopped
 

Method

 
Arrange the salad leaves, rocket, corn, mangetouts, cucumber and avocado on a platter.
Spoon the cottage cheese onto the salad greens.
Top with the carrots and red pepper, then drizzle with dressing.
To make the dressing, whisk together all the ingredients.
Serve with sliced, toasted French loaf.
