Gammon steaks with Mediterranean peppers

    gammon steaks or a whole gammon
  • 1
    red pepper, sliced into strips
  • 1
    green pepper, sliced into strips
  • 15
    ml
    finely chopped parsley
  • Marinade
  • 15
    ml
    wine vinegar
  • 30
    ml
    oil
  • 2
    ml
    salt
  • freshly ground black pepper
  • prepared mustard

Prepare marinade by mixing wine vinegar with 15 ml oil, salt and pepper to taste and mustard.
Trim gammon steaks and slash fat edges to prevent curling during cooking.
Spread marinade mixture on both sides of meat and leave for one hour.
Heat remaining oil in a frying pan.
Remove steaks from marinade and, without letting them drain, cook in hot oil for five minutes on each side, or until browned and crisp.
Remove and keep warm.
Sauté green and red peppers in a pan for two minutes. Add left-over marinade and parsley and heat through.
Spoon peppers on a serving dish and arrange gammon slices on top.
Serve with mashed or roasted potatoes.
