Gai dan chow fan - fried rice with egg

    peanut oil
  • 500
    ml
    cold boiled rice
  • pinch salt
  • white pepper
  • 7
    ml
    light soy sauce
  • 2
    chopped large spring onions
  • 1
    beaten egg
  • 45
    ml
    cooked peas, blanched
  • 1
    small carrot, diced finely and blanched
 

Method

Heat the oil in a frying pan. Add the rice and, with the back of a large spoon, break up any lumps to separate rice grains and coat them with oil. Stir in the salt, pepper and soy sauce. Add the onions and cook for one minute. Pour in the egg and break it up into small pieces as it cooks. Add the peas and carrots and cook to heat through. Place in a heated dish and serve. Serves: 2-3 Preparation time: 10 minutes Cooking time: 10 minutes
