Gaeng kiaw wahn neua (Green beef curry)

    coconut milk

    green curry paste (or more to taste)

    medium aubergine, cubed, salted and drained
  • 4
    lime leaves
  • 30

    fish sauce
  • 10
    ml
    sugar
  • 400
    g
    beef fillet, thinly sliced
  • 60
    ml
    fresh basil leaves, torn
 

Method

8 minutes
 
Pour half of the coconut milk into a wok or saucepan. Add the green curry paste and heat until sizzling. Add the brinjal cubes and cook for about 3 minutes, until tender. Add the remaining coconut milk, lime leaves, fish sauce, sugar and bring to the boil. Add the beef and basil and cook, stirring for about 3 minutes, until meat is just cooked. Serve immediately with Thai fragrant rice.
