Ingredients (19)

4 eggs — boiled, quartered
200 g baby potatoes — boiled and halved
250 g green beans — fine, blanched
2 carrots — julienned
1 cup mixed bean sprouts
1 cup tofu — smoked, cubed
1 cucumber — sliced
1/2 red onion — finely sliced
2 cabbage — baby, shredded
fresh coriander
sea salt and freshly ground black pepper
DRESSING:
1/4 cup peanut butter — crunchy
1/4 cup coconut milk
1 tsp sambal oelek
2 tsp soy sauce
limes
1 red chilli — finely chopped
2 tsp water — hot
sea salt

Method:

Combine the dressing ingredients and taste for seasoning.

Arrange all the vegetables on a platter along with the eggs.

Drizzle over dressing and serve immediately.
