    large eggs, boiled, peeled and quartered

    baby potatoes, boiled and halved
  • 250

    fine green beans, blanched
  • 2
    carrots, cut into matchsticks
  • 1

    bean sprouts
  • 1
    cup
    smoked tofu, cubed
  • 1
    cucumber, sliced
  • 1/2
    red onion, finely sliced
  • 2
    baby green cabbages, shredded
  • fresh coriander
  • sea salt and black pepper
  • DRESSING:
  • 1/4
    cup
    crunchy peanut butter
  • 1/4
    cup
    coconut milk
  • 1
    tsp
    sambal oelek
  • 2
    tsp
    soy sauce
  • juice of 2 limes
  • 1
    red chilli, finely chopped (optional)
  • 2
    tsp
    hot water
  • sea salt
 

Method

Combine the dressing ingredients and taste for seasoning.

Arrange all the vegetables on a platter along with the eggs.

Drizzle over dressing and serve immediately.
