Ingredients (7)

8.00 brown mushrooms
125.00 ml pesto — coriander and cashew
2.00 avocado
1.00 packet organic mixed baby leaves
1.00 lime — juice only
5.00 ml salt
5.00 ml freshly ground black pepper

Method:

Preheat the grill. Place the mushrooms on a baking tray and smother them in pesto. Grill until soft. Scoop the avocado from the skin using a spoon and drizzle lime juice over. Put avo on a bed of lettuce and top with mushrooms. Drizzle over any juices and season.
