    oil
  • 125

    cocktail sausages (beef or pork)
  • 125
    g
    back bacon
  • 125
    g
    button mushrooms
  • 4
    extra-large eggs
  • 4
    medium tomatoes
 

Method

15 mins
 
Heat oil in medium-sized, non-stick frying pan.
Add sausages, bacon and mushrooms.
Fry over medium heat until brown and all liquid is absorbed.

Separate the mixture to create four hollows. Break egg into each, spreading the egg white over the sausages.
Continue to fry until eggs are just set. If desired, place under grill to cook top of eggs.
Remove from pan and cut into quarters. Serve with grilled tomatoes.
