Fruity turkey salad

    ml
    medium curry powder (or more to taste)
  • 5
    ml
    each ground cumin and ground coriander
  • 30
    ml
    chutney
  • 125
    ml
    natural yoghurt
  • 125
    ml
    good-quality mayonnaise
  • 700
    g
    leftover turkey, shredded
  • selection of lettuce leaves of your choice
  • 2
    peaches or nectarines, sliced
  • cashew nuts, pecan nuts or almonds
 

Method

 
In a small pan, gently heat curry powder and spices until aromatic. Don't allow to burn. Remove from stove and allow to cool. When cool, stir in chutney, yoghurt and mayonnaise and lightly fold in turkey. Arrange lettuce leaves on a platter and spoon turkey mixture on top. Add peach or nectarine slices and scatter nuts over. Serve with hot crusty bread.
