Fruity spiced rice salad

    long-;grain rice, uncooked
  • 4
    spring onions, sliced
  • 2
    cloves garlic, crushed
  • 5
    ml
    turmeric
  • 5
    ml
    cumin
  • 5
    ml
    crushed cardamom pods
  • 50
    g
    dried apricots, chopped
  • 1
    red apple, cored and chopped
  • 1
    green apple, cored and chopped
  • 40
    g
    walnuts, chopped
  • 30
    ml
    freshly chopped parsley
  • salt and freshly ground black pepper, to taste
 

Method

15‑20 minutes
 
Steam the rice, spring onions, garlic, spices and apricots for 15 minutes in a steamer. Place the cooked rice in a large bowl and set aside to cool. Add the remaining ingredients and serve.
