Fruity onion sauce

    ml
    oil
  • 1
    large onion, grated
  • 1
    clove garlic, crushed
  • 250
    ml
    apricot or pineapple juice
  • 50
    ml
    fruit chutney
  • 100
    ml
    tomato sauce
  • 20
    ml
    sugar
  • salt and freshly ground black pepper
  • 15
    ml
    cornflour
 

Method

 
Heat the oil and fry the onion and garlic for about five minutes over medium heat until pale brown and fragrant. Add the remaining ingredients and simmer slowly for about 10 minutes. Blend the cornflour with a little cold water to form a smooth paste and stir into the sauce. Heat while stirring until the sauce thickens and is cooked. Adjust the seasoning if necessary and serve hot.
