250.00 g butter — softened
500.00 ml sugar
2.00 eggs — extra-large
15.00 ml vinegar
1.00 ml nutmeg — ground
10.00 ml Baking powder
10.00 ml Bicarbonate of soda
salt — pinch
500.00 ml flour — cake
500.00 ml cornflakes
500.00 ml oats
500.00 ml coconut
250.00 ml mixed nuts — chopped
125.00 ml raisins — or currants

Method:

Preheat the oven to 180 ºC and spray a few baking sheets with non-stick spray or butter lightly.
Beat the butter and sugar together until light and fluffy.
Beat the eggs and vinegar together.
Sift the nutmeg, baking powder, bicarbonate of soda, salt and flour together and add to the butter mixture along with the remaining dry ingredients and beaten eggs.
Mix the ingredients well by hand and shape into walnut-sized balls. Arrange the balls on a baking sheet, leaving sufficient room in between for them to spread. Flatten the balls slightly with your fingers.
Bake for 12-15 minutes until golden brown. Leave to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Store in an airtight container.
Makes about 130 medium-sized cookies.
