Ingredients

    currants
  • 450
    g
    sultanas
  • 450
    g
    raisins
  • 225
    g
    mixed peel
  • 225
    g
    dried apricots, chopped
  • 450
    g
    cooking apples, cored and chopped
  • 125
    g
    walnuts, chopped
  • 350
    g
    soft brown sugar
  • 250
    g
    shredded suet
  • 3
    ml
    ground cinnamon
  • grated rind and juice of two oranges
  • grated rind and juice of two lemons
  • 300
    ml
    brandy
 

Method

 
Place all the ingredients into a large bowl and stir together thoroughly. Cover for 2 hours and then stir again. Sterilise glass storage jars by rinsing with boiling water and drying them at 110 ºC in the oven for 30 minutes. Carefully remove and allow to cool, then spoon in the mincemeat mixture. Seal and store in a cool place. This mincemeat will keep for up to one year. Makes: ± 1,5 kg Preparation time: 30 minutes
