Fruity marshmallow cake

    (1 1/2 packets) Marie biscuits, crushed
  • 125
    ml
    dates, chopped
  • 180
    ml
    red glacé cherries, chopped
  • 250
    ml
    fruit cake mix, chopped
  • 50
    g
    (1/2 packet) pecan nuts, chopped
  • 5
    ml
    cinnamon
  • 1
    ml
    nutmeg
  • 125
    ml
    lemon juice
  • 25
    ml
    castor sugar
  • 100
    ml
    thick natural yoghurt
  • 250
    ml
    marshmallows, chopped
 

Method

 
Grease a 1 litre loaf tin with butter or non-stick spray.
Line with baking paper.
Mix the biscuit crumbs, fruit, nuts, cinnamon and nutmeg together.
Heat the lemon juice, castor sugar and marshmallows until melted.Fold in the yoghurt.
Press the mixture into the prepared tin, cover and freeze.
