Fruity low-fat cheesecake

    digestive biscuits, crushed
  • 125
    ml
    melted low-fat margarine
  • 15
    ml
    custard powder
  • 410
    g
    can low-fat evaporated milk
  • 40
    g
    sachet low-kilojoule granadilla jelly powder
  • 125
    ml
    boiling water
  • 500
    ml
    low-fat granadilla yoghurt
  • 250
    g
    tub low-fat cottage cheese
  • 115
    g
    can granadilla pulp
 

Method

 
Mix the crushed biscuits and margarine and press the mixture on the bottom and up the sides of a shallow 30 cm pie dish.
Mix 10 ml of the custard powder with the evaporated milk and bring to the boil.
Heat until it forms a thick custard.
Dissolve the jelly powder in the boiling water and mix with the custard mixture, yoghurt and cottage cheese.
Turn the mixture onto the crumb crust and chill until set.
Mix the granadilla pulp and remaining 5 ml custard powder and bring to the boil.
Heat until the mixture thickens slightly and is cooked.
Cool and spread over the cheesecake.
Chill until set before serving.
