  • 1
    basic sponge cake
  • 200
    ml
    smooth apricot jam
  • 60
    ml
    water
  • 300
    ml
    toasted coconut
 

Method

 
Prepare basic sponge cake batter and pour into a lined rectangular baking tin. Bake for 20-30 minutes and allow to cool. Cut into squares. Heat apricot jam with water, stirring until melted. Dip each square into the jam mixture, covering all sides. Spread toasted coconut onto a tray and roll each square in the coconut to cover well. Make variations by trying out various jams.
