Fruity glazed baby onions

  • butter and oil for frying
  • baby onions
  • 2
    oranges, juice
  • salt and milled pepper
  • seedless raisins


Heat a liberal quantity of butter and oil and olive oil in a pan. Add baby (pickling) onions and fry until lightly browned. Add the juice of 2 oranges, salt and milled pepper. Cover and simmer for 15 minutes. Add a handful of seedless raisins and simmer until onions are soft and golden and raisins have plumped up, 10 to 15 minutes. Great with roast chicken or turkey.
