300.00 g flour — cake
10.00 ml Bicarbonate of soda
10.00 ml mixed spice — ground
1.00 large orange — peeled and chopped
25.00 ml sunflower oil
100.00 g brazil nuts — chopped
100.00 ml nectarines — dried
250.00 g dates — chopped
125.00 g butter
210.00 g castor sugar
2.00 eggs — large
175.00 ml yoghurt — Bulgarian
80.00 ml milk

Method:

Mix the dry ingredients and fruit together in a large bowl. Beat the butter and sugar until light. Add the eggs, one at a time, beating well to combine. Add the dry ingredients alternately with the yoghurt and milk, to the butter mixture. Sir until well combined, then spoon into a greased loaf tin. Bake in preheated oven for 1 hour, or until a skewer inserted comes out clean.
Makes: 1 loaf cake
Preparation time: 20 minutes
Baking time: 1 hour
Oven temperature: 180 ºC
