Fruity couscous

Ingredients

  • 250
    ml
    vegetable or chicken stock
  • 250
    g
    couscous
  • 30
    ml
    butter
  • 65
    ml
    currants
  • 125
    ml
    soft, dried apricots, chopped
  • 5
    ml
    lemon rind
  • 30
    g
    (1 bunch) fresh coriander, chopped
  • 50
    g
    flaked almonds, roasted
 

Method

5 minutes
 
Bring the stock to the boil in a saucepan.
Add the couscous, remove from the heat and cover with a lid.
Allow to steam for 10 minutes.
Add the remaining ingredients and mix well.
Season to taste with salt and freshly ground black pepper.
Serve hot as an accompaniment to chicken, meat or fish.
