Fruity chicken salad with green pepper and coriander

    cooked chicken, cut into pieces

    nectarines, stoned and sliced into wedges
  • 2
    cling peaches, stoned and sliced into pieces

    small melon, seeded, peeled and cubed
  • 400

    (1 can) mangoes, drained and cut into pieces
  • 2
    green chillies, finely chopped
  • 25

    fresh coriander, finely chopped
  • 30
    ml
    mayonnaise
  • 60
    ml
    sour cream
  • salt and freshly ground black pepper
  • 15
    ml
    cumin seeds, toasted
 

Method

 
Combine the chicken pieces, fruit, chillies and coriander.
Make a dressing by beating together the mayonnaise and sour cream and use to moisten the salad.
Season well with salt and freshly ground black pepper and sprinkle with the toasted cumin seeds.
