Fruity cheesecake

  • 80
    g
    wholewheat breadcrumbs
  • 40
    ml
    bran flakes
  • 50
    g
    polyunsaturated margarine, melted
  • 30
    ml
    sugar free strawberry jam
  • FILLING
  • 1
    pineapple, peeled and cubed
  • 450
    g
    low fat cream cheese
  • 40
    g
    castor sugar
  • 5
    ml
    lemon juice
  • 15
    ml
    gelatine
  • freshly sliced fruit, to decorate
 

Method

 
BASE: Mix the breadcrumbs, bran flakes, melted margarine and jam together and press into the base of a greased 22 cm loose-bottomed cake tin. Set aside in the fridge. FILLING: Place the pineapple into a small bowl, cover with cling film and microwave on HIGH for 2 minutes. Remove and allow to cool. Once cool, blend in a food processor until smooth. Add the cheese, castor sugar and lemon juice and blend until well combined. Heat the gelatine with 25 ml water until dissolved. Mix a little of the filling into the gelatine, then add to the remaining filling and stir well. Pour into the prepared base and refrigerate until set. Garnish with slices of fresh fruit.
