Ingredients (18)

75.00 g raisins — seedless
1.00 green apple — peeled, cored, grated
1.00 carrots — large, grated
1.00 onion — large, sliced
1.00 banana — sliced
20.00 ml jam — smooth, apricot
20.00 ml curry powder — medium
10.00 ml turmeric
250.00 ml water
1.00 bread — brown, sliced, crusts removed, cubed
600.00 g beef mince — lean
30.00 ml vinegar — grape
25.00 ml sugar
7.00 ml salt
2.00 ml freshly ground black pepper
3.00 eggs — extra-large
200.00 ml milk

Method:

Preheat the oven to 180 &degC. Grease a 26 x 19 cm dish with margarine.
Place raisins, apple, carrot, onion, banana, apricot jam, curry powder, turmeric and water in saucepan.
Bring to the boil and simmer for about 10 minutes until fruit is soft. Drain fruit, reserving the sauce.
Soak the bread cubes in the liquid. Mash bread and combine with fruit. Cool.
Combine minced meat, grape vinegar, sugar, salt and pepper and one egg. Add to cooled bread mixture.
Spoon mixture into prepared dish and spread evenly.
Beat remaining eggs and milk together and pour over the meat. Place a few bay leaves on top.
Bake for about 45 minutes or until egg mixture has set and the dish is golden brown.
