    slice brown bread, crusts removed and cubed

    lean mince

    grape vinegar

    salt

    ml
    pepper

    extra-large eggs
  • 200
    ml
    milk
  • few bay leaves
 

Method

 
Preheat the oven to 180 °C. Grease a 26 x 19 cm dish with margarine. Place raisins, apple, carrot, onion, banana, apricot jam, curry powder, turmeric and water in saucepan. Bring to the boil and simmer for about 10 minutes until fruit is soft. Drain fruit, reserving the sauce. Soak the bread cubes in the liquid. Mash bread and combine with fruit. Cool. Combine minced meat, grape vinegar, sugar, salt and pepper and one egg. Add to cooled bread mixture. Spoon mixture into prepared dish and spread evenly. Beat remaining eggs and milk together and pour over the meat. Place a few bay leaves on top. Bake for about 45 minutes or until egg mixture has set and the dish is golden brown.
