Ingredients (5)

410.00 g apricots — tinned halves
1.00 Litres milk
90.00 ml sugar
120.00 ml custard powder
125.00 ml brown sugar

Method:

Drain the fruit well. Halve if desired and set aside. Heat one litre of the milk to just below boiling point.
Meanwhile combine the sugar and custard powder. Mix the custard powder mixture with the remaining cold milk to form a smooth paste and add a little of the hot milk. Mix well and return everything to the hot milk in the saucepan.
Stirring constantly, heat slowly until the mixture comes to the boil. Simmer until the custard thickens and is cooked. Leave to cool.
Divide the fruit between four small ovenproof ramekins and spoon the custard on top.
Meanwhile heat the oven grill.
Sprinkle a layer of brown sugar over the custard in the ramekins and place them in an oven pan filled with a little cold water to prevent the ramekins from cracking. Place under the hot grill and heat until the brown sugar has melted.
Remove from the oven and cool before serving.
