Ingredients (11)

250 g halloumi cheese
15 ml sesame seeds
90 ml flour — cake
sunflower oil — for frying
Salad:
1 rocket
250 ml grapes — seedless
1 mango — peeled and sliced
15 ml fresh mint — to garnish
DRESSING:
150 ml yoghurt — Greek
15 ml lemon juice
5 ml curry powder

Method:

Cut the halloumi cheese into slices. Mix the sesame seeds into the flour. Coat each piece of cheese with the flour and shake off any excess.

Arrange the rocket and fruit on a platter or serving plates. Add half the chopped mint. Mix the dressing ingredients together. Add the remaining chopped mint.

Heat a layer of oil in a frying pan over a medium to high heat. Fry the pieces of halloumi on both sides until golden. Drain on absorbent paper.

Arrange the cheese on the salad or in a small stack next to the salad on each serving plate. Drizzle with dressing or serve on the side. Garnish with mint leaves.

Prepare-Ahead TIP:

Make the dressing the night before. Prepare the mango and grapes in the morning. Cover and refrigerate. Cut and dust the halloumi and set aside. Just before your guests arrive, fry the halloumi and assemble the salad.
