Ingredients (8)

ZESTY LIME CORDIAL:
1 kg sugar
lime — zest and juice
15 ml Citric acid
POMEGRANATE AND STRAWBERRY CORDIAL:
1 kg sugar
140 g pomegranate rubies
250 g strawberries — hulled, chopped
5 ml Citric acid
5 ml lemon — zest only

Method:

Zesty lime cordial:
Put the sugar into a saucepan with 500ml water. Bring to the boil and stir until dissolved. Allow to simmer for five minutes.

Add the lime juice and citric acid. Set aside to cool. Once almost cool, add the lime zest. Set aside for two or three hours.

Pour through a muslin cloth to strain. Use a funnel to pour to the cordial into sterilised bottles. Seal and label. Serve diluted with chilled water or soda water, or add to a cocktail.

Pomegranate and strawberry cordial:

Put the sugar into a saucepan with 500ml water. Bring to the boil and stir until dissolved.

Add the pomegranate seeds and strawberries. Simmer gently for 5 minutes then remove from the heat.

Stir in the citric acid and lemon zest and set aside to cool completely.

Pour through a muslin cloth to strain. Use a funnel to pour the cordial into sterilised bottles. Seal and label. Serve diluted with chilled water or soda water, or add to cocktails.
