Ingredients (8)

1.00 melon — winter, cubed
1.00 pineapple — sliced, cubed
2.00 kiwi fruit — peeled and halved
fresh mint — to garnish
SYRUP
1.00 lemongrass — stalk, bruised
5.00 ml fresh ginger — sliced
500.00 ml sugar
500.00 ml water

Method:

SYRUP: Combine lemongrass, ginger, sugar and water in a saucepan and heat until sugar dissolves. Simmer for 10 minutes, to a runny consistency, then strain. Allow to cool before serving drizzled over piles of chopped or sliced fresh fruit.
