Fruit stack with lemongrass syrup

    winter melon, sliced and cut into squares
  • 1
    pineapple, sliced and cut into squares
  • 2
    kiwi fruit, peeled and halved
  • mint to garnish
  • SYRUP
  • 1
    lemon grass stalk, bruised
  • 5
    ml
    sliced fresh ginger
  • 500
    ml
    sugar
  • 500
    ml
    water
 

Method

10 mins
 
SYRUP: Combine lemongrass, ginger, sugar and water in a saucepan and heat until sugar dissolves. Simmer for 10 minutes, to a runny consistency, then strain. Allow to cool before serving drizzled over piles of chopped or sliced fresh fruit.
