Ingredients (10)

200.00 ml honey
125.00 ml water — or orange juice
0.00 coconut — optional
Dough
200.00 g butter
150.00 ml honey
1.00 eggs — extra-large
10.00 ml Bicarbonate of soda
200.00 ml cornflour
500.00 ml sorghum flour
0.00 salt — pinch

Method:

Preheat oven to 180 &degC.
Butter a 35 x 25 cm baking sheet.
Filling:
Slowly bring pears, honey and water or juice to the boil and simmer until the fruit is soft. Leave to cool.
Dough:
Cream the butter and honey until light and fluffy.
Beat in the egg and bicarbonate of soda well.
Combine the cornflour, sorghum flour and salt.
Add to the butter mixture and mix to form a dough.
Press two thirds of the dough onto the bottom of the baking sheet.
Cover the rest of the dough with clingfilm and freeze until firm.
Spread the filling over the dough in the baking sheet and sprinkle with coconut (if using).
Grate the remaining dough on top and bake for 25 to 30 minutes or until golden brown.
Makes 40 squares.
