FRUIT
440 g sugar
500-750 ml rum — or brandy

Method:

Wash the fruit and allow it to dry. Peel if necessary. Cut the larger fruit like pineapples into smaller pieces or slices. If you use whole fruit, like plums, prick the skins with a needle.

Put the fruit into sterilised jars. Add the flavourings of your choice. Add the sugar and the brandy or rum. Seal the jars and leave them for a month in a cool dark place.
