Fruit soaked in brandy

Spoon this over vanilla ice cream, add it to a fruit cocktail, or fill a meringue basket with cream and top with the fruit.

Ingredients

 
  • 1.5
    kg
    fruit
  • 440
    g
    sugar
  • 500-750
    ml
    brandy or rum
  • Flavours: star anise, cinnamon, vanilla pod, cloves, orange or lemon peel

Method

 
Wash the fruit and allow it to dry. Peel if necessary. Cut the larger fruit like pineapples into smaller pieces or slices. If you use whole fruit, like plums, prick the skins with a needle.

Put the fruit into sterilised jars. Add the flavourings of your choice. Add the sugar and the brandy or rum. Seal the jars and leave them for a month in a cool dark place.
