    brown and wild rice mix
  • sunflower oil for frying

    large onion, chopped
  • 3
    large stalks celery (with leaves), chopped

    each dried cumin and coriander

    coriander seeds

    rashers rindless back bacon, chopped
  • 125

    chopped mixed dried fruit

    roughly chopped mixed nuts

    sherry

    ml
    fresh orange juice

    vegetable stock cube
  • 30

    boiling water
  • salt and milled black pepper
 

Method

 
Cook rice according to packet instructions, but for 5 to 6 minutes less than specified. (You will not need seasoning sachet provided.) Drain. Heat oil and stir-fry onion and celery until glossy. Add spices and cook for 2 minutes. Add bacon and fry for 2 minutes. Add remaining ingredients and simmer for 10 minutes. Lightly toss in rice and cook until heated through. TOTAL KILOJOULE COUNT: 11 820 kJ (2 825 Cal). A portion: 2 955 kJ (705 Cal).
