Ingredients (13)

250.00 g margarine
250.00 g castor sugar
1.00 eggs — beaten
10.00 ml vanilla — essence
400.00 g flour — cake
20.00 g Baking powder
500.00 g fruit mincemeat — or chopped dates
14.00 g Bicarbonate of soda
300.00 ml water — boiled
SYRUP
100.00 ml water — hot
80.00 g sugar
10.00 ml vanilla — essence
50.00 g margarine

Method:

Beat margarine and sugar together until very light. Beat in egg, add vanilla essence, then flour and baking powder separately.
Put the fruit mince into a bowl, adding the bicarbonate of soda and boiling water.
Add mince mixture, pour into greased and floured pie pan. Bake at 150 ºC for 30 minutes, or until golden.
SYRUP: Boil water, sugar, essence and margarine together. Pour over baked pudding and allow to cool.
Serve with whipped cream.
