Fruit mince pudding

  • SYRUP

    hot water

    ml
    vanilla essence

    margarine
 

Method

 
Beat margarine and sugar together until very light. Beat in egg, add vanilla essence, then flour and baking powder separately. Put the fruit mince into a bowl, adding the bicarbonate of soda and boiling water. Add mince mixture, pour into greased and floured pie pan. Bake at 150 ºC for 30 minutes, or until golden. SYRUP: Boil water, sugar, essence and margarine together. Pour over baked pudding and allow to cool. Serve with whipped cream.
