Fruit loaf cake

    castor sugar
  • 1
    orange, grated rind
  • 3
    eggs

    self-raising flour
  • 5
    ml
    ground mixed spice
  • pinch of salt

    currants, cleaned
  • 90
    g
    mixed glacé fruit, chopped
  • 180
    g
    sultanas, cleaned
  • 90
    ml
    milk
 

Method

 
1. Preheat oven to 180 ºC. Grease or spray two aluminium foil loaf pans well. Set aside. 2. Cream butter, sugar and orange rind until light, creamy and fluffy. Add eggs, one at a time, beating well after each addition. 3. In another mixing bowl, sift the flour, mixed spice and salt together. Mix prepared fruit quickly into dry ingredients. 4. Fold creamed butter mixture into fruit mixture, alternating with the milk. Mix well. 5. Divide cake mixture between the prepared loaf pans, and smooth tops. Bake for 1 to 1 1/2 hours, or until the skewer comes out clean. Cool and keep.
