Pour the batter into a jug and refrigerate until needed.
Stir in the melted butter just before cooking.
Heat a large nonstick pan and drop spoonfuls of the batter into the hot pan to make 7-8 crumpets.
Turn after about 1 minute and bake until golden brown and done.
Transfer to a heated plate and repeat with the remaining batter. Serve with fresh fruit and honey, or syrup and lean bacon.
