Fruit compôte with yoghurt and muesli

    g
    mixed dried fruit
  • 100
    g
    seedless raisins
  • 210
    g
    sugar
  • 400
    ml
    water
  • 4
    cardamom pods
  • 2
    ml
    almond essence
  • 3
    ml
    orange rind
  • 400
    ml
    Greek yoghurt
  • 200
    ml
    muesli
  • 50
    ml
    honey
 

Method

15 minutes
 
Soak the mixed dried fruit in warm water for 20 minutes. Drain. Place the sugar, water, cardamom pods, almond essence and orange rind in a saucepan and heat gently, stirring until sugar has dissolved. Add the dried fruit and raisins and then simmer gently in the syrup for 15 minutes. Allow to cool. Once cool, spoon fruit into serving dishes or glasses. Top with Greek yoghurt, then sprinkle with muesli and drizzle with honey. Place under a hot grill for 3-5 minutes until the muesli is crisp and golden.
