    baking powder
  • pinch salt

    sugar
  • 2
    eggs, slightly beaten
  • 100

    oil
  • 410

    fruit cocktail
  • 7
    ml
    bicarbonate pf soda dissolved in a little milk
  • SYRUP
  • 250
    ml
    Nestlé Ideal Evaporated Milk
  • 60
    g
    sugar
  • 110
    g
    margarine
  • 5
    ml
    vanilla essence
 

Method

 
Preheat the oven to 180 ºC (375 ºF). Sift the dry ingredients together in a mixing bowl and add the remaining ingredients. Mix well with a wooden spoon and turn into a greased 24 cm pie dish. Bake for 30 to 40 minutes until golden brown or until a testing skewer comes out clean. Remove the tart from the oven and prick. Meanwhile prepare the syrup. Place all the ingredients, except the vanilla essence, in a saucepan and bring to the boil, stirring continuously. When the mixture comes to the boil, remove from the stove and add the vanilla essence. Pour over the warm tart and allow to cool.
