250.00 ml white sugar
45.00 ml butter
3.00 eggs — extra-large
250.00 ml flour — self-raising
2.00 ml Baking powder
salt — pinch
60.00 ml milk
820.00 g fruit cocktail — tinned
CARAMEL SAUCE
410.00 g evaporated milk
250.00 ml sugar
5.00 ml caramel — essence

Method:

Preheat the oven to 184 ºC and spray a 1,3 litre ovenproof dish with nonstick spray or grease lightly with butter or margarine. Beat the sugar and butter together. Add the eggs one by one, beating well after each addition. Sift the dry ingredients together and add to the butter mixture, alternating with the milk. Add the fruit cocktail and mix well. Turn the mixture into the prepared dish and bake for about 30-40 minutes until done. Meanwhile make the caramel sauce: Mix all the ingredients in a medium-sized saucepan and bring to the boil. Simmer slowly for 5 minutes and remove from the stove plate. Pour the hot sauce over the hot tart as soon as it comes out of the oven. Serve lukewarm with cream if desired.
Makes 1 large tart.
