Fruit cocktail jelly

    ml
    gelatine
  • 60
    ml
    cold water
  • 1
    lemon, the juice
  • 1
    red apple, peeled, cored and diced
  • 1
    large orange, peeled down to the flesh and cut into segments (reserve the juice)
  • 100
    ml
    cooler such as Nordic ice
  • 450
    ml
    lemonade
 

Method

 
Sprinkle the gelatine over the cold water and leave to sponge.
Sprinkle the lemon juice over the apple to prevent discolouration.
Add the orange segments and juice and divide among four glasses.
Stand the gelatine over a bowl of boiling water until dissolved and stir in the cooler and lemonade.
Pour over the fruit and chill until set.
