Ingredients (15)

150.00 g dates — chopped
7.00 ml Bicarbonate of soda
125.00 ml water — boiled
250.00 g glacé fruit
125.00 g butter — or margerine
100.00 g brown sugar
25.00 ml mixed citrus peel
3.00 ginger — preserve, chopped
250.00 g flour — self-raising
2.00 ml mixed spice — ground
salt — pinch
2.00 eggs — large, beaten
75.00 ml brandy
160.00 g glacé cherries — halved
50.00 g walnuts — chopped

Method:

Grease a two litre microwave container with margarine. Sprinkle bicarbonate of soda and dates. Add boiling water. Let stand for one minute. Add the fruit, butter and brown sugar and microwave for three minutes on 100 per cent power. Add the citrus peel and ginger and microwave for two minutes. Cool. Sift the dry ingredients together. Beat eggs and brandy together. Fold into the fruit mixture, alternating with the dry ingredients. Fold in cherries and walnuts. Spoon into greased container. Place on an upturned saucer and microwave for about 18 minutes or until a testing skewer comes out clean. Cool for three minutes and turn out on wire rack. Cool completely. Store in an airtight container. Every week pour a little brandy over the cake. Tested in a 600 W microwave oven.
