Fruit baked in paper

  • 500
    g
    plums, apples, bananas or peaches (or a mixture)
  • 45
    ml
    brown sugar
  • grated peel of half a lemon
  • 5
    ml
    ground cinnamon
 

Method

 
Preheat oven to 180 ºC. Halve fruit and remove stones, if any. Place fruit in a small bowl. Add sugar and lemon peel. Cut out 8 circles, each 20 cm in diameter, from baking parchment. Place 4 circles on a baking sheet. Divide fruit between circles. Dust with cinnamon. Top with remaining 4 parchment circles and fold edges over. Bake for 20 minutes. TO SERVE: Place parcels on plates and carefully break open paper.
