Fruit and rice puffs

  • 500
    ml
    cooked white rice
  • 2
    eggs, lightly beaten
  • pinch salt
  • 15
    ml
    grated lemon rind
  • 250
    ml
    dried fruit cake mix
  • 60
    ml
    almond flakes
  • 50
    g
    cake flour
  • 60
    ml
    butter
  • castor sugar
 

Method

 
Blend all the ingredients except the butter and castor sugar together. Mix well until there are no lumps. Heat the butter in a pan and drop spoonfuls of the batter into the pan. Fry for about 3 minutes on each side or until the puffs turn pale brown. Remove from the pan and place on paper towelling to drain. Sift castor sugar over the puffs and serve hot or cold. Makes about 30 puffs.
