    bicarbonate of soda

    salt
  • 250

    butter
  • 250

    light brown sugar
  • 125
    ml
    white sugar
  • 2
    extra-large eggs
  • 5
    ml
    vanilla essence
  • 250
    ml
    coconut
  • 250
    ml
    dried apricots, roughly chopped
  • 250
    ml
    glacé cherries, roughly chopped
  • 100
    g
    (1 packet) almond flakes
  • 100
    g
    (1 packet) pecan nuts, chopped
 

Method

 
Preheat oven to 190 °C and line two baking sheets with baking paper.
Sift the dry ingredients together.
Cream the butter and add the sugars, beating until the mixture is light and fluffy.
Add the eggs one by one, beating well after each addition.
Beat in the vanilla essence.
Add all the dry ingredients in one go and mix.
Add the remaining ingredients and mix well.
Drop heaped teaspoonfuls of the mixture on the prepared baking sheets, leaving enough space in between for the cookies to spread.
Bake for 12 to 15 minutes or until golden brown, turning the baking sheet halfway through the baking time.Leave the cookies to cool on the baking sheets before carefully transferring them to a wire rack to cool completely.
