Fruit kebabs with granadilla syrup

    ml
    sugar
  • 125
    ml
    pineapple juice
  • 1
    cinnamon stick
  • 6
    cardamom pods (optional)
  • 10
    ml
    fresh ginger
  • 8
    fresh granadillas
  • 2
    tin
    or granadilla pulp
  • 50
    ml
    lemon or lime juice
  • 250
    ml
    each cubed watermelon, sweet melon and pineapple
  • 250
    g
    fresh strawberries, hulled and halved if too big
 

Method

15 mins
 
1. Heat the sugar and pineapple juice in a saucepan. Add the cinnamon, cardamom, if you are using it, and ginger. Simmer for 10 minutes. Add the granadilla pulp and simmer for a further five minutes. Remove the mixture from the heat and leave to cool completely. Once cool, remove the spices and stir in the lemon juice. 2. Thread the fruit onto small kebab sticks. Pour the syrup over the kebabs and refrigerate for an hour.
