Ingredients (8)

1 lime — wedges
1 salt
125 ml tequila
60 ml cointreau — or triple sec
60 ml pnp sugar
125 ml lime juice
10 litchis — fresh or tinned
ice — cubes

Method:

 Rub the rim of each cocktail glass with a lime wedge.

Scatter salt into a shallow saucer and dip rims to coat.

Pour tequila, Cointreau, sugar, lime juice and litchis into a blender and fill with ice cubes. Blitz until icy and smooth.

Pour into tumblers or a large jug and serve garnished with lime wedges.

Good ideas: Add granadilla pulp. Replace litchis with mixed berries or diced mango. For a delicious brandy cocktail, mix ¼ cup (60ml) brandy, 2 Tbsp (30ml) litchi juice, 2 Tbsp (30ml) lemon juice and 1 Tbsp (15ml) sugar together.
