100.00 g sugar
100.00 ml water
3.00 eggs — just the yolks
300.00 ml cream
450.00 ml fruit — puree

Method:

Dissolve the sugar in the water and bring to the boil until the syrup reaches the thread stage.
Beat the egg yolks together and slowly add the syrup while beating continuously. Continue beating until the mixture is light and fluffy and the dish feels cold. Fold in the cream and beat well.
Finally add the fruit puré;e and turn the mixture into a freezer container. Freeze until the mixture starts freezing on the sides. Beat with a wire beater and freeze once more. Repeat the process three to four times.
Line the surface of the ice cream with wax paper to prevent the formation of ice crystals and freeze until required.
To prepare the fruit: Remove the tops and stems and set aside. Hollow out the fruit and fill with the ice cream. Replace the tops to form a lid and freeze the fruit until hard.
Arrange on a serving platter and serve.
