Ingredients (9)

70.00 g breadcrumbs — wholewheat
100.00 ml almonds — or peanuts, chopped
1.00 eggs — large, separated
200.00 ml yoghurt — low fat
100.00 ml evaporated milk
10.00 ml orange — zest only
50.00 ml castor sugar
60.00 ml raisins
1.00 pineapple — peeled and thinly sliced

Method:

Spread the breadcrumbs and nuts on to a baking tray. Place under a grill and toast until golden. Set aside to cool.
Beat the egg yolk and stir in the yoghurt, evaporated milk, orange rind, castor sugar and toasted mixture.
Beat the egg white until stiff and fold gently into the yoghurt mixture. Pour into a container and freeze until starting to set.
Remove from the freezer and beat with an electric beater until smooth, stir in the raisins and freeze until firm.
To serve, grill the pineapple slices and use to decorate the servings of frozen dessert.
