Ingredients (13)

BATTER
100.00 g flour — cake
salt — just a pinch
50.00 g poppy seeds
1.00 eggs — extra large, separated
150.00 ml milk
15.00 ml oil
FRUIT
125.00 g strawberries
100.00 g chocolate — melted
3.00 apples
1.00 pineapple
oil — for deep frying
6.00 wooden skewers
TOPPINGS
mixed berries — coulis or chocolate sauce

Method:

1. Sift the flour and salt into a bowl, stir in the poppy seeds, make a well in the centre and add the egg yolk and enough milk to make a thick batter. Add remaining milk and oil and set aside for 30 minutes.
2. Just before using the batter, beat the egg white until stiff and fold into the batter.
FRUIT
3. Wash and dry the strawberries. Dip one side of each strawberry into melted chocolate and place on greaseproof paper to set. Core the apples and cut each into eight pieces. Peel and core the pineapple and cut into large pieces.
4. Heat the oil to 190 ºC. Dip the apple and pineapple into a little flour to coat and then drop into the batter. Remove fruit from batter with a fork allowing excess batter to run off. Drop coated pieces into hot oil, turning them as soon as they become golden on one side.
5. Remove fruit from oil with a slotted spoon and drain on absorbent paper. Thread assorted fruit onto kebab sticks and serve with chocolate sauce or a berry coulis.
