Method

 
Preheat oven to 160 ºC. Fry courgettes, onions, garlic and peppers in butter until soft and lightly browned. Remove vegetables with a slotted spoon and set aside to cool. Beat eggs in a large bowl, and add all the cooled vegetables, tomatoes, seasoning and herbs and mix well. Place mixture in an ovenproof dish and bake for 25 minutes or until set, or pour into a frying pan and cook over a low heat. Sprinkle cheese on top of the frittata and place under the grill for about 2 minutes or until cheese has melted. Serve immediately.
