Fried yellow rice with peas

    cooked and drained rice
  • 1
    onion
  • 10
    ml
    turmeric
  • 250
    g
    peas, shelled and cooked
  • 45
    ml
    finely chopped coriander leaves
  • 75
    ml
    oil
  • 4
    eggs, lightly beaten
  • 50
    g
    Parmesan cheese
  • salt and black pepper
 

Method

 
In a wok or a large frying pan heat the oil and cook onion until soft. Add turmeric and fry for 1 to 2 minutes. Add rice, peas, and heat through, stirring all the time. Stir in beaten eggs and cook quickly. Just before serving, add coriander and Parmesan cheese. Serve with a mixed salad.
