Fried rice with mushrooms and nuts

    fresh ginger, grated

    red pepper, seeded and diced

    button mushrooms, sliced

    mangetout (optional)

    cooked brown rice

    Brazil nuts, finely chopped

    whole cashew nuts
  • 30
    ml
    soy sauce
  • salt and black pepper to taste
 

Method

 
Sauté the onions, garlic, ginger and sweet pepper in a little oil until soft. Add the mushrooms and stir-fry until pale brown. Add the mangetout and stir-fry for about another minute. Add the rice and nuts and blend well. Add the soy sauce and stir-fry for one minute or until the dish is heated through. Season and serve immediately.
