Fried rice with eggs

    brown rice

    oil
  • 2
    sticks celery, thinly sliced
  • 500

    chicken, cooked and diced
  • 250
    ml
    green peas (canned or frozen)
  • 410

    chickpeas
  • 1
    carrot, peeled and grated
  • 15
    ml
    soy sauce
  • 2
    large eggs, lightly beaten
  • 2
    spring onions, finely chopped
 

Method

 
Cook rice according to directions on packet. Set aside. Heat oil in a wok or deep frying pan over moderate heat for 1 minute. Add the celery and stir for 2 minutes. Mix in cooked rice, chickpeas, carrots and soy sauce. Cook, uncovered, stirring frequently, for 5 to 7 minutes or until heated through. Stir in eggs and cook, stirring constantly, until eggs are set. Sprinkle with spring onion.
